Day Off

Good afternoon! What a beautiful day it is! I am in love with this amazing weather we have had this week so far. I have been working during my afternoons and evenings in the salon for the first part of the week and was really excited to have a couple days off from doing hair to spend with my boy! I've started my Spring cleaning and wanted to get a couple other things checked off my to-do list. 

This is what Damon and I have done today...

Since we are home bound some days during the week-without a car we like to take strolls around the neighborhood. Today we went on an adventure to the SLC Riverton Library. We ended up checking out 7 new books for us to read to him! I am very excited to pull these out before bedtime tonight. I have really found a love for reading to my boy everyday. I know it is very important for his learning. He is going to be such a smart boy! I know it. On our way to and from, we saw a couple different flowers and blossoms on the trees that were very pretty and we had to take a couple pictures of them. They were just too pretty to not. Such a beautiful Spring day.


After we got home, played, talked to each other, snuggled.... I guess I wore Damon out. It was time for a nap and so down he went! He is so good at taking naps and falling asleep on his own. I think I am pretty spoiled to have such a sweet, self soothing little boy!

 Anyway, all day I couldn't get the thought of delicious cupcakes out of my mind. So, I HAD to make a batch!!!!! I came across a recipe that I found from another blog called Gluten Free Goddess recipes. They are Orange Creme Cupcakes!!!!!! OH BOY, I found my new love. They turned out lovely.....and taste even better. The best part is they are Gluten Free!  I'll include the recipe below. 


Orange Creme Cupcakes

3/4 cup sorghum flour (or brown rice flour)
3/4 cup potato starch 
3/4 cup organic cane sugar (I just used regular white sugar)
1/4 teaspoon sea salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon xantham gum
2 teaspoon fresh orange zest
2 tablespoons light olive oil or vegetable oil
1 tablespoon raw organic agave or honey
1 cup fresh squeezed orange juice at room temp. (I used juice of one orange which was about 1/2 cup then just added 1/2 cup of 100% orange juice from concentrate)
1 tablespoon Ener-G Egg re placer whisked with 1/4 cup warm water (I whisked a plain old egg and took 1 tablespoon of that egg and whisked it with the water. 
2 teaspoon of vanilla

Instructions

Preheat oven to 350 degrees F. Line a 12-cupcake pan with liners. 

In mixing bowl, whisk together the dry ingredients. Add in the orange zest, oil, agave, orange juice,egg and vanilla

Beat on medium speed for 2 minutes until batter is smooth and fluffy. 

Let batter sit a minute before spooning it into cupcake liners. 

Bake in the preheated oven on center rack for 20 minutes until golden and firm. 

Remove and cool on wire rack. 

Frost.

Frosting

2 cups organic powdered sugar
1/4 cup Spectrum organic Shortening 
1 teaspoon vanilla
2-3 tablespoons fresh orange juice-as needed. 

Instructions

Combine sugar,shortening, and vanilla and beat on medium high until frosting is smooth and creamy. Add orange juice one tablespoon at a time. 

They are delicious and hope you enjoy them if you try them out! I like to improvise with cooking and baking so go ahead and substitute things if you desire.
